A good way to use up squash!

Squash Latkes

2-3 cups of shredded squash
1 beaten egg
1/4 cup of bread crumbs
salt
pepper
oil

Mix all of the ingredients in a bowl while you're heating up some oil in a big pan. Make nice little patties and put them in the oil when it was hot enough. Allow to brown on one side before flipping. They'll stay together this way.

  1. This sounds incredible. I've been buying yellow squash a lot lately and I've just been sautéing it with olive oil, rosemary, and some chili pepper. It's yummy, but this sounds like a great way to mix it up. Thanks. Oh, are they good with sour cream like regular Latkes?
